This Delicious corn Fritters Recipe is Crispy on the edges, soft in the inside and super delicious to eat. These cheesy corn cakes are so easy to put together and make a great side dish for any type of meal! I use fresh corn and cut it right off the cob, but you can use canned as well, they are yummy either way.
INGREDIENTS
2 cups of corn (fresh, canned or frozen)
1/4 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon smoked paprika
1 egg
1 green onion
1/2 cup grated parmesan
1 handful cilantro
1 tablespoon lime juice
Salt and pepper, to taste
1 tablespoon oil
Sour cream, for garnish
DIRECTIONS
1. Mix the corn, yellow cornmeal, all-purpose flour, smoked paprika, egg, parmesan, green onion, cilantro and lime juice in a Large Mixing bowl. If it is dry, just add in a few drops of water at a time until nice and moist. 2. Heat 1 tablespoon of oil in a Small Frying pan. Spoon the corn mixture into the pan to form patties and cook until golden brown , then flip and do the same to the other side, about 4 minutes per side. Garnish with a dollop of sour cream. Enjoy!
