I am Italian, so pasta is my life, but not all pasta is good, weeding through the flavors can be challenging to come up with good recipes that you want to make more then once. But when You find that perfect blend of flavors, that is when you know you hit the jackpot. This Delicious Creamy Sausage and Mushroom pasta is exactly that. I ate so much the first time, I couldn't eat almost the whole next day, it was that good!
The Ingredients
1 pound pasta I used Rotini but you can use (rotini, penne, rigatoni or bow ties)
1 pound Italian pork sausage
2 tspn salted butter
1 pound thinly sliced fresh mushrooms
2 large shallots (finely chopped)
1 Tbspn minced garlic
½ tspn salt
¼ tspn freshly ground black pepper
2 cups heavy whipping cream
Fresh Parsley (for garnishing)
Directions:
Cook the pasta of choice until al dente, set aside 1 cup of pasta water, drain then add pasta back to the pot..
Using a large skillet, cook the sausage until thoroughly cooked making sure to break it into small bite size pieces. remove from heat and drain grease.
Using the same skillet ad the butter until melted, then add in the mushrooms, garlic, salt and pepper and onions until tender (around 4-6 minutes)
whisk in the heavy cream and bring it to a boil. Lower the heat the medium low and cooke another 10 minutes until nice and thick. Then add in the sausage and the pasta and fold until thoroughly coated. Add in pasta water if it gets too thick.
Serve up then top with fresh parmesan and parsley. I also serve it with garlic toast.
